Baked salmon is one of my easiest recipes. It only takes a couple of minutes to prepare before going in the oven and is ready to eat in 20 minutes.
At a basic level, this is just a salmon fillet with a knob of butter or olive oil wrapped in tinfoil and cooked on a medium heat. Even just that is nice, drizzled in lemon before serving.
But, for the sake of a couple of minutes of extra prep time, it’s also well worth trying out one of my other optional ingredient mixes below.
Baked Salmon Recipe
Core instructions
1-2 salmon fillets (deboned)
Preheat the oven to a medium heat (gas mark 4 / 180°C / 350°F). Wrap each salmon fillet, together with one of the optional ingredient mixes below, separately in tinfoil. Place in the oven for 20 minutes, after which the salmon is ready to be served with or without sides.
Optional ingredients
Simple dressing (per fillet):
1 tbsp olive oil or a small knob of butter
1/2 tsp dill
Pinch of salt and pepper
1/2 lemon, juiced
Add the above ingredients to the salmon (except the lemon juice) and wrap in tinfoil. Place in the oven to cook and, when ready, squeeze the lemon juice over the cooked fillet.
Wholegrain mustard coating (per fillet):
1 tbsp wholegrain mustard
Rub the mustard over the top of the salmon with a spoon. Wrap in tinfoil and place in the oven to cook.
Dijon mustard and honey dressing (per fillet):
2 tsp olive oil
1-2 tsp Dijon mustard
1 tsp honey
1-2 spring onion/s, chopped
1 garlic clove, crushed*
1/2 tsp dill
1/2 lemon, juiced
Pinch of salt and pepper
Here, Dijon mustard can easily be substituted with wholegrain (or other) mustard. Mix all the above ingredients in a jug. Pour over the salmon and wrap in tinfoil before placing in the oven to cook.
*Diet hack: use frozen garlic to save chopping.

Don’t forget to experiment with the ingredients and their respective quantities. You’ll end up with something you can call your own which is easy to prepare, tastes delicious and allows you to show off your culinary skills to family and friends.
