I love my breadless eggs benedict.
I sometimes order eggs benedict when I go out for brunch but I wanted to experiment with homemade alternatives. This recipe has changed my weekend breakfasts at home. The beauty is I can add more and more of each ingredient depending on how hungry I am, and the lack of bread means I can do so without getting too full. It’s great.
My breadless eggs benedict recipe is delicious and easy to follow. Please give it a try – I think you’ll love it too.
Breadless Eggs Benedict Recipe
Ingredients
1 tbsp mayonnaise
1 tsp Dijon mustard
1 tsp apple cider vinegar
1 tsp water
1 or 2 ripe avocados
2 or 3 eggs
3 or 4 slices of ham
A handful of pine nuts
½ small bunch of chives, chopped
1 chilli, finely sliced
Salt and pepper
Cooking Instructions
First up, let’s make the hollandaise sauce. Using a fork, whisk the mayonnaise, mustard, vinegar and water together in a cup until the consistency is smooth. Place the cup in the fridge.
Next, remove the avocado (or avocados) from its shell and take out the stone. Place in a cup or bowl and smash it into smoother consistency before sprinkling it with a pinch of salt.
Now the eggs need poaching. We all have slightly different ways of doing this but my preferred method is to get a saucepan of water boiling and adding a teaspoon of vinegar. I then crack my eggs into the water and turn the heat down so the water simmers. After two minutes, I scoop the eggs onto a plate before drying them with a paper towel.
All that’s left to do is to chop the chives and the chilli.
Finally, everything needs to be layered up. Get the ham onto a plate and scoop the smashed avocado on top. Add the eggs and drizzle them in the hollandaise sauce before scattering over the pine nuts, chives and chilli and serving up.
