Fried banana and scrambled eggs. Better still – fried banana, scrambled eggs and grilled bacon. It sounds a bit weird, I admit.
Yet this recipe has become a firm breakfast and brunch favourite of mine. I’ve even had it for dinner once or twice. Don’t judge it until you’ve tried it. It’s like a delicious French toast, but better and…healthier?

Fried Banana and Scrambled Eggs
Ingredients
2 bananas
Knob of unsalted butter
2-3 eggs
2 tsp ground cinnamon
Pinch of salt
Optional: grilled bacon
Cooking Instructions
If you’re having bacon with the meal, get that going in the grill first.
Get two bananas and chop them into chunks. Heat a knob of butter in a pan on a medium heat and, once warm, add the bananas. Once the chunks have browned on one side, flip them over and sprinkle the salt and cinnamon on top. Meanwhile, make some scrambled eggs in another pan (or in the same pan and mix the eggs in, if you don’t mind the meal looking a bit messier – but there’s less tidying up afterwards). Once the eggs are done, serve up and marvel at this unexpectedly delicious delight.
Notes
I don’t even usually like banana…true story. But here, I do.
Bacon is an optional extra and I’m sure you can do a lot else with this dish. Let me know if you come up with any creative variations.
