Knocking a sweet potato salad together takes minimal effort. It works as a delicious accompaniment to most dishes or as a meal in it’s own right, especially if you pimp it up by adding tasty extras like bacon or chicken.
Sweet Potato Salad Recipe
Ingredients
4 sweet potatoes
1 packet of rocket
5 spring onions*
10-20 cherry tomatoes
1-2 handfuls of feta cheese*
2-4 tbsp olive oil (plus a bit more for cooking the sweet potatoes)
2-4 tbsp red wine vinegar
Salt and pepper
*I’ve also tried this recipe using a red onion instead of spring onions, and it works just as well.
*Or any other type of cheese you fancy. I find parmesan to be a good one as an alternative.
Cooking Instructions
First things first, let’s get the oven on a medium to high setting and warm up a baking tray with olive oil. After five minutes or so, add the sweet potatoes to the baking tray. Set a 30 minute timer and, when this goes off, flip the potatoes over and set another 30 minute timer. Once the hour is up, check the potatoes are soft. If so, set them to one side to cool.
After they’ve cooled down, place the packet of rocket in a large bowl. Roughly chop the sweet potatoes, cut the cherry tomatoes in half and finely chop the spring onions before adding each to the bowl. Crumble the feta up by hand before sprinkling into the bowl. Then, add the olive oil, red wine vinegar, salt and pepper before mixing everything together thoroughly by hand.

And there you have it. A simple, tasty, homely salad which can be jazzed up in any way you see fit. Mix it up however you want.
