Diets are notorious for their boring salads. The average tuna salad gets a particularly bad rep.
This one I’ve come up with here is delicious, though. Tuna in a Mediterranean salad with avocado mixed in.
Healthy, easy and luxuriously tasty. Perfect if you’re dieting, thinking about doing a 100 Day Diet Challenge or just fancy a salad.
Tuna Salad Recipe
Makes 1 portion
Ingredients
1 ripe avocado
60g rocket
1 can of tuna in spring water
10 olives, sliced
4 artichoke hearts (from a jar)
4 sundried tomatoes, chopped
3 gherkins, chopped
1 tbsp capers
1 tbsp olive oil
1 tbsp pine nuts*
2 tbsp feta cheese*
Salt and pepper
*Or another type of nut or cheese, like mozzarella. The recipe also works without either.
Preparation Instructions
First up, let’s get a bowl and smash the avocado up using a fork. Add the rocket and olive oil to the bowl and mix thoroughly with the avocado.
The rest is easy. Mix in the tuna, olives, artichoke hearts, sundried tomatoes, gherkins and capers thoroughly.
Serve on a plate or, if taking for a packed lunch for work, a Tupperware container.
Finally, sprinkle over the pine nuts, feta and a pinch of salt and pepper.
